Serves 4. Enough for one chicken per person. Purchase enough ingredients to make 3 batches of chicken, each serving 4 people (3 batches of 2 chickens is plenty.)Each batch will produce around 5 cups of salad, so you will need 15 cups total. Here are what you need:
- 4 boneless, skinless chicken breasts
- 1 head romaine lettuce
- 2 tablespoons fresh parsley
- 1 cup almonds; 1/2 cup red onion slices
