- 4 chicken breasts
- 1 can of white beans, drained and rinsed
- 1 green bell pepper
- 2 cups cooked brown rice
- 1 cup salsa
- 3 tablespoons vegan mayonnaise (Tofutti)
- Trim excess fat off of chicken and cut it into 1-inch cubes. Place on a paper towel to drain.
- Mix together all dry ingredients in a small bowl and add water to make a smooth batter, stirring constantly.
- Mix together spicy ingredients in another bowl, stir well to combine, and set aside until ready to serve chicken.
- Heat oil in a deep fryer or deep pot over medium-high heat until oil reaches 375 degrees F (190 degrees C).
- Dip each piece of chicken into the batter and carefully place it in hot oil. Fry for 6 minutes or until golden brown, turning once during cooking time.
- Drain fried chicken on paper towels to absorb any excess grease before serving it with sauce for dipping.

Season with additional salt and pepper as desired. Serve immediately on buns or bread alternative of choice topped with lettuce leaves, tomato slices, and pickles. Leftovers can be stored covered in the refrigerator for up to 3 days.
