  • 4 chicken breasts
  • 1 can of white beans, drained and rinsed
  • 1 green bell pepper
  • 2 cups cooked brown rice
  • 1 cup salsa
  • 3 tablespoons vegan mayonnaise (Tofutti)

Preparation Steps

  1. Trim excess fat off of chicken and cut it into 1-inch cubes. Place on a paper towel to drain.
  2. Mix together all dry ingredients in a small bowl and add water to make a smooth batter, stirring constantly.
  3. Mix together spicy ingredients in another bowl, stir well to combine, and set aside until ready to serve chicken.
  4. Heat oil in a deep fryer or deep pot over medium-high heat until oil reaches 375 degrees F (190 degrees C).
  5. Dip each piece of chicken into the batter and carefully place it in hot oil. Fry for 6 minutes or until golden brown, turning once during cooking time.
  6. Drain fried chicken on paper towels to absorb any excess grease before serving it with sauce for dipping.
