What you’ll need
- 1 box of pasta
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme leaves
- 1/2 tsp dried oregano leaves
- Salt and pepper to taste -1 tbsp red wine vinegar
- 4 cups chicken or vegetable stock.
Cooking Instructions
1. Put a pot of water on the stove to boil, and add some salt. Once boiling, add a splash of olive oil and the pasta to cook for about 10-12 minutes or until al dente. Drain pasta in a colander, reserving about 1/4 cup of the cooking water.
2. Place the pot back on the stove and add butter to melt over medium heat. Add finely chopped onion and garlic, stirring often for 3-5 minutes until softened but not browned; season with salt if desired. Stir in flour, whisking constantly for two minutes.
Gradually pour in milk while whisking and bring mixture to a simmer. Simmer sauce, stirring occasionally, until thickened (about 5 minutes). Stir sauce into cooked pasta along with grated cheese and parsley, adding reserved cooking water as needed to loosen the mixture (you may need more than 1/4 cup), and serve immediately.
Garnish with freshly ground black pepper and green onions, if desired.
