What you’ll need
- 1 box of pasta
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme leaves
- 1/2 tsp dried oregano leaves
- Salt and pepper to taste -1 tbsp red wine vinegar
- 4 cups chicken or vegetable stock.
1. Put a pot of water on the stove to boil, and add some salt. Once boiling, add a splash of olive oil and the pasta to cook for about 10-12 minutes or until al dente. Drain pasta in a colander, reserving about 1/4 cup of the cooking water.
2. Place the pot back on the stove and add butter to melt over medium heat. Add finely chopped onion and garlic, stirring often for 3-5 minutes until softened but not browned; season with salt if desired. Stir in flour, whisking constantly for two minutes.
Gradually pour in milk while whisking and bring mixture to a simmer. Simmer sauce, stirring occasionally, until thickened (about 5 minutes). Stir sauce into cooked pasta along with grated cheese and parsley, adding reserved cooking water as needed to loosen the mixture (you may need more than 1/4 cup), and serve immediately.
Garnish with freshly ground black pepper and green onions, if desired. To make this recipe even tastier, stir in one can of Rasta Pasta’s Caribbean Coconut Curry Sauce just before adding the grated cheese and serving it. Toss in some chopped fresh parsley and/or basil for additional flavor. -In a small bowl, mix together the mayonnaise, garlic, salt, and pepper. Stir in the Parmesan cheese and set aside.
In another small bowl whisk together 2 eggs with 1/2 cup of milk or cream until well combined. Set aside.
In a deep saucepan bring water to a boil and add salt. Add pasta to boiling water according to package instructions (time will vary based on thickness). Cook over medium heat until pasta is cooked through but still firm to bite into. Drain pasta from water and rinse under cold running water until cool enough to handle, then drain well again. Pour noodles back into the pot and toss with olive oil. Pour the egg mixture over top of the pasta so that it covers evenly.
Continue cooking uncovered for about 4 minutes, stirring frequently so that eggs coat all pieces. Remove from heat when eggs are set but still moist. Toss with mayonnaise mixture and stir gently to combine, being careful not to break up too much of the egg strands as you do so. Serve immediately, garnished if desired with fresh herbs or shredded mozzarella cheese
